This is the second in our "Discovery Series" and showcases 3 types of tea from the same plant that tea comes from - Camellia sinensis.   White tea is the least processed of all the teas.  Essentially, the tea leaves are just plucked, wilted and dried.   Green tea is made from the same leaf and is plucked, wilted, rolled and dried.   Black tea has an extra step added which is oxidation.   This was originally done to ensure that the tea could make the long distance journey from China to the European markets.   

Enjoy these teas without the addition of milk or sugar and discover the difference in taste between all 3 types of the tea in this Discovery Series:

1) White Peony (Organic Bai Mu Dan White Tea) 50g 

This premium White Peony (also known as Bai Mu Dan) is from the Fuijian province in China.   

White teas are not well known yet in Canada and high quality organic white teas of this quality are very difficult to find.   Typically white tea is produced early in spring and from the best plants using the buds and one or two leaves.   You will see the silvery buds present throughout this lovely tea.  Be sure to re-steep this tea and note how the flavour changes with each steeping.  

Steeping Temperature:  80° - 82°C Bring water to a boil.  Let sit for 3-4 minutes and then pour over 2-3g of leaves to steep for 1 cup

Steeping Time:  1st & 2nd Steeping:  1 - 2 mins;  3rd & 4th Steeping:  3 - 4 mins. 

Ingredients: White tea (2019 Spring Harvest)

2) Himalayan Rain (Darjeeling Estate STGFOP1 2nd Flush Green Tea) 80 g

This green tea is from an estate located high in the Himalayan mountains at an elevation of 3,500 - 7,000 feet above sea level.  It is harvested early in the year, during the "2nd flush" growing season to ensure excellent flavour.  

Steeping Temperature:  80° - 82°C Bring water to a boil.  Let sit for 3-4 minutes and then pour over 2g (1 tsp) of leaves to steep for 1 cup

Steeping Time:  1 - 3  minutes.   Can be re-steeped 3 times

Ingredients:  Single Estate Green tea

3) Queen Catherine (English Breakfast Black Tea) 80g

Likely very similar to the tea first brought to England in the mid 1600’s by Queen Catherine as part of her dowry when she came to marry King Charles II.   This tea is so smooth that it can be easily enjoyed without the addition of milk or sugar so you can realize the full health benefits of the high mountain tea it is made with. 

Steeping Temperature:  100°C Bring water to a boil and then pour over 2g (1 tsp)  of leaves per cup

Steeping Time:  3 - 5 minutes

Ingredients:  100% Keemun Black tea
