Spicy German Applecake Recipe

Spicy German Applecake Recipe
1. In a large bowl, beat eggs and oil until smooth
2. Add sugar and vanilla and mix until blended
3. In a separate bowl, combine remaining dry ingredients
4. Add dry ingredients and mix well
5. Fold in apples
6. Pour into a greased 9x13 pan
Bake at 350F for 45 – 50 minutes.
Alternative presentation: Slice approximately half the apples thinly and chop the rest to mix into the batter as above. Grease a large springform pan and place batter in pan. Arrange the sliced apples artfully on top, lying them down on the flat side. Mix 2 Tablespoons of sugar and ½ a tsp of cinnamon together. (I used Cane Sugar, but you could use any you have) Sprinkle top with cinnamon sugar mix. Bake as above but you may need to extend the baking time by 10 – 20 minutes. Check with cake tester near middle to ensure cake is done.
Wonderful served with whipped cream! Pair it with Hansel & Gretel Gingerbread Chai!
